What is induction cooking and how does it work?
Induction cooking is widely loved by chefs and home cooks, but is still not yet widely known by many consumers! Induction cooktops work a little differently from a traditional gas cooktop but there are many benefits—induction uses the cookware to generate the heat for faster, more efficient heating. When you place a pan on an induction cooktop and turn on the cooktop, an electric current travels through a coiled copper wire, which produces and applies heat directly to your pan.
Heating the cookware directly prevents heat loss (plus, the area surrounding your pan remains cool to the touch, since only your pan gets heated). The main advantages of induction cooking you’ll immediately notice are the speed of cooking and also the ease of clean-up.

Induction and electric cooktops differ in their heat generation methods. Electric cooktops use coils or radiant heat elements beneath a ceramic or glass surface to transfer heat to the cookware and surrounding area. In contrast, induction cooktops utilize magnetic fields to directly heat the cookware, bypassing the cooktop surface. This distinction in heat transfer leads to another significant difference - responsiveness. Induction cooktops heat up and cool down rapidly, allowing for quick adjustments during cooking. On the other hand, electric cooktops may have slower response times due to the heat transfer process. These differences in heat generation and responsiveness are important factors to consider when deciding between induction and electric cooktops.
One of the greatest benefits of induction cooktops is the ease of keeping it clean. There are no grates that need to be removed and cleaned separately like with gas cooktops.
Simply wait for the cooktop to cool and apply a small amount of cooktop cleaner with a clean cloth. Then, wipe the surface with a damp cloth and use a soft cloth to dry it.
For dried-on food, let the cooktop cool and scrape it off with a glass scraper. Be sure to use the scraper at a low angle (such as 20° or 30°) to avoid scratching your cooktop.
