INGREDIENTS:

  • 2 ¼ cups All-Purpose Flour
  • 2 ½ tsp Baking Powder
  • ½ tsp Table Salt
  • 1 ½ Cup Unsalted Butter, at Room Temperature
  • ¾ cup vegetable oil
  • 1 3/4 cups Sugar
  • 1 tbsp Pure Vanilla Extract
  • 3 Large Eggs, at Room Temperature
  • 1 cup milk

INSTRUCTIONS:

1. Preheat oven to 350°F. Grease two 9 inch pans.

2. Sift the flour, baking powder, and salt into a mixing bowl.

3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar and vanilla on medium speed until light and fluffy, about 5 minutes.

4. Add the eggs, one at a time.

5. Add the oil. Beat together.

6. Add the flour mixture in two parts. Add half of the flour mixture, then add the milk, then the second half of the flour mixture.

7. Scrape the batter into the prepared pan or pans and spread it so that it is smooth in the pan(s). Bake until a toothpick inserted in the center comes out clean. About 25 minutes.

8. Remove from oven and let cool completely in the pans.

DOUBLE BATCH

  • 5 cups All-Purpose Flour
  • 5 tsp Baking Powder
  • 1 tsp Table Salt
  • 2 cups (4 sticks) Unsalted Butter, at Room Temperature
  • 4 cups Sugar
  • 2 tsp Pure Vanilla Extract
  • 8 Large Eggs, at Room Temperature
  • 2 cups Whole Milk

TENNIS BALL ASSEMBLY INSTRUCTIONS:

1. Bake cake batter in two 8-inch round pans.

2. Once the cakes have baked and cooled, use a 2-inch round cutter to cut out cake rounds.

3. Trim two of the rounds into half-sphere shapes.

4. Fill 2.5-inch half-sphere molds with ganache or buttercream, then place the trimmed cake pieces into the molds. Refrigerate until firm.

5. Remove the cake halves from the molds and attach them together with additional ganache or buttercream to form a full sphere.

6. Roll out modeling chocolate to ⅛ inch thickness.

7. Drape the modeling chocolate over the cake ball, smoothing it with your hands to create a tennis-ball shape.

8. Use a clean sponge to add texture to the surface.

9. With a dresden tool, lightly etch the curved line pattern found on a tennis ball.

10. Mix neon yellow and green edible dusts, then brush the mixture evenly over the ball.

11. Using edible white paint and a small brush, paint over the etched lines to create the signature tennis-ball stripes.

12. Slice and enjoy!
