Game Day Gochujang Pimento Cheese by Chef Nyesha Arrington

INGREDIENTS

• 12 oz sharp cheddar cheese, grated
• 4 oz cream cheese, softened
• ¼ cup mayonnaise
• 3 tbsp gochujang
• ¼ cup diced roasted red peppers
• ¼ cup diced pimentos
• 1-2 green onions, finely chopped
• 1 clove garlic, minced
• 1 tsp Worcestershire sauce
• 1 tsp smoked paprika
• ½ tsp cayenne pepper (optional, for extra heat)
• Juice of half a lemon
• Salt and pepper to taste

METHOD

1. Roast the Peppers - If using fresh red peppers, roast them until charred, then peel and dice. If using jarred roasted red peppers, simply dice them.

2. Mix the Base - In a large bowl, combine the cream cheese, mayonnaise, and Worcestershire sauce until smooth.

3. Incorporate Gochujang - Mix in the gochujang, smoked paprika, cayenne pepper (optional for extra heat), and lemon juice until well blended.

4. Combine Cheeses - Gradually fold in the grated cheddar cheese until evenly distributed.

5. Add Vegetables - Stir in the roasted red peppers, pimentos, green onions, and garlic.

6. Season - Taste and adjust with salt and pepper as needed.

7. Serve - Serve warm or chilled. Serve with pretzel bites, an assortment of crackers, and celery.
