
Italian Chicken with Potatoes & Onions
Ingredients
8 servings:
4 chicken drumsticks, skin on
4 chicken thighs, skin on
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 pounds small Yukon potatoes, cut into quarters
1 cup of dry white wine
1/4 cup olive oil
1 tablespoon kosher salt
1 tablespoon fresh ground pepper
1 tablespoon finely chopped fresh oregano
2 lemons, cut into quarters
Finely chopped fresh parsley, as desired
Instructions
Step 1
Preheat oven to 375⁰F.
Step 2
Season chicken with 1 teaspoon salt and 1 teaspoon pepper; set aside.
Step 3
In large roasting pan add potatoes, onions, wine, oil, 1 tablespoon salt, 1 tablespoon pepper and oregano; toss to coat vegetables. Place seasoned chicken and lemon wedges on top of vegetables; roast 60 to 70 minutes or until chicken has reached an internal temperature of 165⁰F and vegetables are tender and golden brown.
Step 4
Remove chicken and vegetables to serving platter and sprinkle with chopped parsley.
