Homemade Herb Pesto with Lisa Raleigh

Fresh, homemade herb pesto is easy to make and requires only a few simply ingredients. In this recipe we will show you how to make Lisa Raleigh's delicious homemade herb pesto using the Bosch ErgoMixx hand stick blender.

The ingredients for this recipe can mixed and matched depending on what you have at home. Your leaves can be rocket, basil, parsley or any other herb that you like. Different combinations of leaves will make the pesto taste slightly different every time. In this recipe, we used extra virgin olive oil but you could also use other oils such as melted coconut oil.

You can also change the pesto up by adding different kinds of nuts such as almonds, cashew nuts, pecan nuts or walnuts like we did in this recipe.

Once you are done with the preparation, simply take your fresh bright green pesto and scrape it into a little jar to keep it air tight. Optionally, you can also drizzle a little bit of olive oil on top to preserve it. The pesto should last you between 5 - 7 days in the fridge if stored as prescribed.

Here is all you need to make a quick and delicious pesto at home:

  • 4 cups herbs of your choice (basil, rocket, coriander, parsley – anything goes!)
  • ½ cup extra virgin cold-pressed olive oil
  • ¼ cup pine nuts / walnuts, toasted
  • 1 tablespoon fresh garlic
  • ¼ teaspoon Himalayan rock salt
  • Black pepper to taste

Method

Prepare your pesto in just three simple steps:

  • Roughly chop herbs and set aside.
  • Blitz all ingredients in a blender until reaching desired consistency (should not be a paste).
  • Serve and enjoy!

How to Serve the Pesto

Pesto is simple, versatile and always great to have in the fridge to add fresh flavour to your dishes. You can add the green pesto to some hot pasta, gluten-free pasta if desired, and add some parmesan shavings and roasted tomatoes on top. Alternatively, the pesto also tastes great with seeded crackers as a midday snack. Adding the pesto to mayonnaise will also create a great pestonnaise, which you can enjoy with with roasted potatoe wedges or sweet potato wedges. And for a light and healthy lunch you can add a table spoon of pesto to a portion of wild rice with pecan nuts to get all your nutritious carbs, fats, proteins in.
