The following dish is another recipe in our Cooking with St. Jude series that spotlights St. Jude patients and their favorite recipes.
In early 2019, Santiago came home from school and told his parents, Nancy and Diego, that his leg hurt. At first, they thought perhaps he fell and twisted his knee, but the pain not only continued, it grew worse. Tests soon revealed Santiago had Philadelphia chromosome positive acute lymphoblastic leukemia, which means it’s more difficult to treat. Santiago started treatment at a hospital in Iowa, but his cancer did not go into remission. His doctors recommended he undergo a bone marrow transplant and referred him to St. Jude Children’s Research Hospital®.
“St. Jude is a ray of hope for my son,” said Diego, who was Santiago’s stem cell donor. “We are grateful to St. Jude, that Santiago’s doctors have such humanity and great strength of character.”
For the Tomato Sauce:
2 tomatoes quartered
¼ onion quartered
1 garlic clove
1 cup water
1 tablespoon Knorr® chicken bouillon For the Rice:
⅛ cup vegetable oil
2 cups of white rice
¼ onion finely diced
1 garlic clove finely minced
1 tablespoon Knorr® chicken bouillon
pinch powder cumin
1 ½ cups water

Whole chicken (with skin)
1 cup of oil
1 tsp of black pepper
1/2 tsp of paprika

1 jalapeño
1 tomato
