Bright, caramelized carrots get a tangy lift and smoky kick in this simple side dish. Toss roasted or quickly pan-seared carrots with rice vinegar, lemon, olive oil and smoked paprika, then finish with crumbled nori for a salty, umami-rich twist ready in minutes and perfect alongside grilled proteins or a grain bowl.

Ingredients

3 servings:

4 big carrots

2 tbsp. rice vinegar

1 tsp. smoked paprika powder

1 tbsp. lemon juice

1 tbsp. olive oil

1 nori leaf (quartered)

Salt

Pepper

Instructions

Step 1

Peel the carrots and slice them into ribbons.

Step 2

Boil the carrots in salted water for about 30 seconds.

Then rinse with cold water and dry.

Make the marinade by combining the rice vinegar, lemon juice, olive oil, smoked paprika powder, salt & pepper.

Mix everything well!

Now layer the carrot ribbons and nori leaves in the marinade. Stir!

Place in the fridge for at least 1 hour.
