Rhubarb Soda

Bright and effervescent, rhubarb soda turns the tart, fragrant stalks into a sparkling, homemade refresher. A quick rhubarb syrup—sweetened and optionally brightened with lemon or a touch of ginger—stirs into chilled sparkling water for an easy, elegant alternative to store-bought sodas. Serve over ice with a mint sprig or lemon wheel, or make a larger batch of syrup to keep in the fridge for instant seasonal drinks.

Ingredients

2 servings:

700 g rhubarb

200 g sugar

500 ml water

Sparkling water

Utensils

Cutting board

Instructions

Step 1

Chop rhubarb. Add to a pot with sugar and water and bring to a boil. Lower heat and let simmer for 15 min.

Step 2

Strain through a sieve and transfer to the fridge to cool. To use, pour some syrup into a glass and top with sparkling water till it’s sweetened to taste. To store the syrup, strain it into a glass bottle and store in the fridge where it will keep for at least 2 weeks. Enjoy!
