Ingredients
4 servings:
4 cups mashed potatoes
2 eggs
2 tbsp flour
1 cup shredded cheese
Salt
Topping:
1 cup sour cream
3 scallions
Instructions
Step 1
Mix the mashed potatoes with eggs, flour, cheese, and salt.

Step 2
Cover your work surface with some flour. Form 16 balls from potato mixture & flatten slightly.

Step 3
Fry the potato pancakes on medium heat for 3-4 minutes on each side until golden brown.

Step 4
Season sour cream with salt & pepper.

Step 5
Top pancakes with sour cream & scallions. Enjoy!
