From Chef Curtis Stone: Why I Love the Bosch Induction Cooktops

Cooking is one of the world’s oldest and most celebrated traditions. And today, although we’ve come a long way in tools, technique, and ingredients, I love that cooking is still a practice deeply rooted in the family tradition. At my restaurant, Gwen, we cook all of our meat over an open flame; it’s a visceral, emotional connection to food. And while I love the simplicity of man – meat – fire, I believe both young and experienced chefs need to innovate – whether it’s experimenting with unusual flavors or new, cooking methodologies. Which brings us to induction cooking !

As a chef, when I visualize a new dish I start by imagining the fresh ingredients I’d like to utilize. I also put a lot of weight and importance on the cooking technique. Whether I am cooking at Maude or Gwen , or simply preparing a meal for my family, induction cooking is a method that I find myself using time and time again. Why? Well, it’s quite simple, really.

Heat Efficiency: Imagine this – it’s a gorgeous summer morning and you are so inspired by the farm fresh eggs and juicy nectarines you picked up from the Sunday Farmers’ Market. A tasty breakfast of chive scrambled eggs topped with parmesan cheese, paired with fluffy buckwheat pancakes with a sizzling nectarine compote, and crispy slab bacon is all beckoning, but do you have the time and resources to prepare this mouthwatering meal? With a Bosch Induction Cooktop , the answer is yes. Induction is one of the most centralized heat methods available, as magnetic currents run through the cooktop to heat up the pot or pan on its surface. This means quick heating time, especially with the SpeedBoost™ feature on Bosch models, which adds more power to speed up the cooking process. Plus, less heat escapes from the cooktop so you don’t have to worry about wasting energy or heating up your kitchen. A good way to keep your cool as the weather heats up!

Cooking Flexibility: Now picture that same breakfast scenario – each of those dishes requires different levels of heat and cooking times. Luckily, my friends at Bosch have simplified this process with some really awesome features. First, AutoChef™ detects the temperature of the pan once its placed on the cooktop and distributes perfect, consistent heating to cook each food item. And with FlexInduction™, you can combine two smaller induction cooking zones into one large zone for items that require a larger cooking space – like those salty, smoky bacon strips. And lastly, PowerMove™ divides the cooktop into three preset power level zones, so you simply move the cookware to change the power level. It’s quick and easy and will have you cooking like the pros.

Easy Cleaning: If you’ve read my previous posts , you’ll know that mastering kitchen cleanup is important to me. I’m a huge advocate for cleaning as you go. But, did you know that using a Bosch Induction Cooktop also allows for easy cleanup? Since induction heats your pots and pans, not the cooktop itself, the surface is safe to touch, which means that after every bit of your chive scrambled eggs is devoured, you can wipe down the cooktop with a damp cloth to remove any residue or pancake batter that may have splattered. Never let the fear of cleanup keep you from cooking again!

So by now, I’ve shared my favorite reasons for using induction cooking, but wouldn’t you like to see it in action? A few months ago I threw a special dinner party in the Hollywood Hills to prepare a few of my favorite dishes for 20 special guests . A tasty raviolo is always a crowd pleaser, so I used the cooktop to perfectly boil water to cook the pasta and simmer a delicious green sauce. Check out this video to see it in action!
