
Valentine’s Ice Cream Sandwich
Ingredients

1 pint ice cream
6 cookies
7 oz white chocolate
2 oz sprinkles

Double boiler (heat - resistant bowl and pot)
Serrated bread knife
Cutting board

Instructions
Step 1
Remove the pint of ice cream from the freezer and let sit 5–10 min until the surface is slightly softened but not melted. Turn the block of ice cream out onto a cutting board and, using a warmed, clean serrated knife, slice it into three even slabs

Place each ice cream disc on the bottom cookie, top with the matching cookie, and press gently to form the sandwiches. Insert a straw or stick through the center of each sandwich to use as a handle for dipping; place the sandwiches on a lined tray and freeze while you prepare the chocolate.
Step 3
Prepare a double boiler: bring water to a gentle simmer and keep at low heat. Put the chopped white chocolate in a heat‑proof bowl over the pot and stir until smooth and glossy, 3–5 min; remove from the heat and keep warm.
Step 4
Remove one sandwich at a time, hold it by the straw, and coat it with the melted chocolate). Immediately press into sprinkles so they adhere.

Place finished sandwiches back on the tray and let the chocolate set in the freezer 60 min. Enjoy!
