This make-ahead layered oat and berry parfait combines creamy yogurt and milk-soaked rolled oats with honey, cocoa and a mix of fruits and crunchy nuts for a balanced breakfast or light dessert. After a short prep, the mixture rests in the fridge so the oats absorb the liquid and the flavors mellow; frozen berries are gently warmed with a touch of sugar to make a bright compote, while banana, walnuts and chocolate shavings add sweetness and texture. It assembles quickly in small bowls and is ideal for serving chilled, garnished with extra mixed nuts for crunch perfect for busy mornings or a relaxed weekend treat.

Ingredients

2 servings:

4 1/4 oz rolled oats

7 oz natural yogurt

1 cup milk

4 tbsp honey

3 1/2 oz mixed berries (frozen)

1/2 tbsp sugar

2/3 oz walnuts

2/3 oz mixed nuts

1/2 banana

1 tbsp unsweetened cocoa powder

2/3 oz chocolate shavings

Mixed nuts (for serving)

Instructions

Step 1

Ingredients: 4 1/4 oz rolled oats | 7 oz natural yogurt | 1 cup milk | 3 tbsp honey

Utensils: bowl (large) | plastic wrap

In a large bowl, stir together oats, yogurt, milk, and honey. Cover and chill in refrigerator overnight or at least 2 - 3 hours.

Step 2

Ingredients: 3 1/2 oz mixed berries (frozen) | 1/2 tbsp sugar

Utensils: saucepan (small) | bowl (small, for serving)

For berry topping, heat frozen berries and sugar in a small saucepan over medium heat, stirring occasionally, for approx. 5—7 min. until mixture has thickened slightly. Remove from heat. To serve, spoon one third of the oat mixture into a glass and top with berries.

Step 3

Ingredients: 2/3 oz walnuts | 2/3 oz mixed nuts | 1 tbsp honey

Utensils: knife | cutting board | bowl (small, for serving)

For nut topping, chop walnuts and mixed nuts and combine with honey in a small bowl. Stir in one third of the oat mixture and transfer to a serving glass. If desired, top with extra nuts to serve.

Step 4

Ingredients: 1/2 banana | 1 tbsp unsweetened cocoa powder | 2/3 oz chocolate shavings

Utensils: bowl (small, for serving)

For cocoa topping, slice banana. Then stir cocoa powder and two thirds of the chocolate shavings into one third of the oat mixture. Transfer to a serving glass and top with banana slices and one third of the chocolate shavings.
